Festive Vanilla Cake

vanilla cake recipeI’ve been making this vanilla cake for a few years now. It’s easy, delicious and can be dressed up with icing. The festive bundt pan also helps with the theme, just amping up the christmasy look to it.

You really only need two bowls and a bundt pan, which means easy cleanup! No stand-mixer that I have to schlepp out of the pantry.

In our next place, I want a bigger kitchen where I can keep that puppy on the counter full-time. Plus a window! But anyways, this is a great cake to whip up quickly. I like to eat it for breakfast with tea (or coffee), pour some icing on top and it’s dessert or just as itself while standing in the kitchen. Right? Anyone else snack that way?

You might already have all of the ingredients at home already, so it you are in a pinch with company coming over, this is the recipe to whip up!

Vanilla Cake Recipe

Festive Vanilla Cake

A fun festive dessert for the holiday season! Try baking this for Christmas and enjoy with family and friends.

Ingredients

  • 2 sticks butter room temperature
  • 1.5 cups caster sugar
  • 6 eggs
  • 3.5 cups all-purpose flour
  • .5 tsp baking soda
  • 250 ml low-fat natural yogurt
  • 4 tsp vanilla extract
  • 1-2 tsp powdered sugar

Instructions

  1. Preheat oven to 350F.
  2. Place a baking tray in oven to heat.
  3. Grease a bundt tin with butter. Don't be shy.
  4. Mix the butter and sugar together in a large bowl. I used a wooden spoon, till it's light and fluffy.
  5. Mix baking soda with flour.
  6. Add the eggs, whisking one at a time with a tablespoon of flour. Carefully fold in the remaining flour using a metal spoon.
  7. Then fold in the yogurt and vanilla extract until combined.
  8. Pour mixture into the tin and spread until level.
  9. Place the tin on the preheated baking sheet and bake for 45-60 minutes. Check with a toothpick. If it's clean, the cake is done.
  10. Remove and place onto a wire rack still in the tin. Cool for 15 minutes.
  11. Gentle pull away from the edges and then turn it out onto the wire rack. Leave to cool completely.
  12. Once it is cool, you can use a small sieve and sprinkle the powdered sugar over the top.
  13. Enjoy!
