Herbs in cocktails is one of my new favourite things. Adds such a depth of flavour. Whether they’re muddled, infused, or simply snipped for a pretty and fragrant garnish, fresh herbs make a wonderful addition to summer cocktails.

A perfect pairing is gin and thyme, thyme adds that woodsy scent and flavour to the drink. My Thyme of Your Life cocktail mix is a perfect drink for that Saturday afternoon. You can also put on Dirty Dancing if you really want to elevate the experience 🙂 Who doesn’t want to drink and watch this classic film with Patrick Swayze?

You can enjoy this cocktail all year round, it’s refreshing and a little tart. I snacked on salted nuts with herbs and a little arugula salad while sipping this one.

Thyme of Your Life Cocktail

A light and refreshing gin cocktail infused with thyme simple syrup

Ingredients

  • 2 cups water
  • 1 cup sugar
  • 3 tbsp fresh thyme
  • 2 tbsp gin
  • 1 tbsp lemon juice
  • 2 tsp of thyme simply syrup see recipe
  • 3 tbsp tonic or soda water

Instructions

  1. Make a simple thyme syrup by bringing 2 cups water, 1 cup sugar, and 3 tablespoons fresh thyme to a simmer in a small saucepan.
  2. Let simmer for a few minutes then remove from heat and let infuse for another ten minutes.
  3. Strain into a jar.
  4. For each drink combine 2 tablespoons of gin, 1 tablespoon fresh lemon juice, and 2 teaspoons thyme syrup in a small glass.
  5. Stir well, add 4-5 ice cubes & top off with about 3 tablespoons tonic or soda water.
