What's Cookin'

Food52

Hi everyone,

First off, Happy Thanksgiving to our American friends! Seeing all of the recipes and ideas online the last month has inspired this post today. I’m not the biggest fan of turkey, but I sure do love turkey leftovers. The classic is the sandwich with turkey, cranberry sauce (I mix it with mayo), lettuce and stuffing on some great artisan bread. A leftover turkey sandwich is the best and almost leaves you satisfied. Then again there are many more ways to use up those leftovers, especially the turkey. I’m sharing a few of my favourite ideas I’ve seen lately online below; these could also be used in a month when Christmas rolls around. Most families in Canada still have the turkey for dinner, instead of ham, fish or roasts, which are all great other options too!

1. Crunch Turkey Salad with Peanut Dressing (Bon Appetit)

2. Leftover Turkey Spring Rolls (Pioneer Woman)

3. Turkey Pho (Food52)

4. Leftover Breakfast Sandwiches (How Sweet Eats)

5. Stovetop Roast Turkey and Mole Enchiladas (Serious Eats)

6. Carla Hall’s Turkey Pot Pie (The Chew)

How delicious do all of these look? Are you thinking about buying a turkey just to make some delicious leftovers afterwards? I certainly am.
