Sweet Potato Minestrone Soup

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1 onion diced
  • 2 sweet potatoes peeled and cut into small cubes
  • 3 garlic cloves minced
  • 6 cups low sodium vegetable stock
  • 1/2 tsp salt
  • 2 cups cooked white beans
  • 1 1/2 cups uncooked small pasta or whole grain
  • 3 cups packed baby spinach
  • 2 tbsp lemon juice

Instructions

  1. Heat a large pot over medium heat.
  2. Add the onion, sweet potatoes and garlic.
  3. Saute ingredients for 8 minutes until they soften.
  4. Add stock and salt.
  5. Bring to a boil, reduce to a simmer, cover and cook for 5-10 minutes until soft.
  6. Return to a boil, stir in beans and pasta. Reduce to a simmer and cover.
  7. Cook for 10 minutes until the pasta is tender.
  8. Before serving, stir in the spinach and lemon juice.
  9. Serve hot. I like to sprinkle parmesan over top.
