Sweet Potato Minestrone Soup
A sweet potato minestrone soup is the ultimate cold weather budget-friendly meal. Make a batch for a week of lunches or a hearty family meal.

diced

sweet potatoes
peeled and cut into small cubes

garlic cloves

low sodium vegetable stock

salt

cooked white beans

cups
uncooked small pasta or whole grain

packed baby spinach

lemon juice

Heat a large pot over medium heat.

Add the onion, sweet potatoes and garlic.

Saute ingredients for 8 minutes until they soften.

Add stock and salt.

Bring to a boil, reduce to a simmer, cover and cook for 5-10 minutes until soft.

Return to a boil, stir in beans and pasta. Reduce to a simmer and cover.

Cook for 10 minutes until the pasta is tender.

Before serving, stir in the spinach and lemon juice.

Serve hot. I like to sprinkle parmesan over top.
Leftovers will keep for a week.
