Ingredients

  • 1/4 cup fresh mint leaves
  • 3 tbsp fresh lime juice
  • 2 oz white rum
  • blood orange soda
  • 1/4 cup cranberry juice
  • ice cubes
  • fresh mint, cranberries for garnish

Ginger Simple Syrup

  • 1 knob peeled ginger
  • 1/2 cup water
  • 1/2 cup sugar

Sugared Rim

  • 1 lime wedge
  • brown sugar

Instructions

Ginger Simple Syrup

  1. In a small pan, combine the ginger, sugar, and water and bring to a simmer, stirring until the sugar is dissolved, about 2 minutes. Then set aside to chill. You can make this ahead of time.

Sugared Rim

  1. Rub the rim of the glass with a lime wedge and then gently coat in brown sugar. Let dry as you get together the ingredients for the drink.

For the Mojito

  1. In the bottom of a highball glass, add the mint and lime wedge, 2 tablespoons of simple syrup, and use a muddler to smash them all together and release the mint oil and lime juice.

  2. Add ice cubes, rum, and blood orange soda to fill the glass most of the way. Put a floater of cranberry juice on the top. You could serve as is (I love the look of the floater and the two different colors) or stir them together.

  3. Garnish with fresh mint, cranberries, and candied ginger.
