Ingredients
Slicesof sourdough or french bread
Extra virgin olive oilfor brushing
Heirloom cherry tomatoes
Buffalo mozzarella or burrata
1/4cupfresh oregano leaves
1/4cupfresh basil leaves
1tbspfreshly chopped chives
1/4cupfinely grated parmesan
1/3cupextra virgin olive oil
sea salt
cracked black pepper
Instructions
Preheat your BBQ to high heat. You can also use a char-grill pan on a stove top.
Make the pesto: Place the oregano, basil, chives, parmesan, oil, salt and pepper in a small food processor. Process and set aside.
Lightly brush both sides of the bread slices with oil and garlic and cook on each side until charred. Set aside.
Thread the tomatoes onto metal skewers. Brush them with oil and cook until charred and blistered.
Top the toast with the mozzarella, tomatoes, pesto and extra basil leaves. Crack fresh pepper and sea salt on top. Sprinkle some olive oil over the bruschetta.
