Cucumber & Scallion Salad
Quick and refreshing salad you can enjoy at lunch or with dinner.

cucumber
persian or english

kosher salt

3-4
sliced scallions

tbsp
unseasoned rice vinegar

tsp
toasted sesame seeds

chili oil

Smack the cucumber with a rolling pin or just slice up in large chunks.

Put in a colander and toss with salt.

Let sit for 10-15 minutes to drain excess liquid.

Put cucumbers in a medium sized bowl and toss with scallions, rice vinegar and sesame seeds.

Taste and add salt if needed.

Drizzle with chili oil.
