Cucumber & Scallion Salad

Quick and refreshing salad you can enjoy at lunch or with dinner.

Ingredients

  • 1 lb cucumber persian or english
  • 1 tsp kosher salt
  • 3-4 sliced scallions
  • 3 tbsp unseasoned rice vinegar
  • 1 tsp toasted sesame seeds
  • chili oil

Instructions

  1. Smack the cucumber with a rolling pin or just slice up in large chunks.
  2. Put in a colander and toss with salt.
  3. Let sit for 10-15 minutes to drain excess liquid.
  4. Put cucumbers in a medium sized bowl and toss with scallions, rice vinegar and sesame seeds.
  5. Taste and add salt if needed.
  6. Drizzle with chili oil.
