Cucumber Scallion Salad

cucumber scallion saladThis cucumber scallion salad is so refreshing and addicting that you may end up eating it in one sitting. It’s great for a picnic, potluck or served with your BBQ. The dressing is super tangy and light. It’s such a healthy salad to have instead of one with a dairy or fat based dressing. You can serve this up with beef or a pork dish or just eat it alone watching the latest Game of Thrones episode.

cucumberscallionsandwich4I’ll toast the sesame seeds in a big batch and keep in an airtight container. This way I can use them for many other dishes and are easy on hand. I love adding them to salads or using in baking or a meat dish. This cucumber scallion salad is so vibrant and gorgeous to look at. It was even better the next day when the flavours became more intense.
cucumberscallionsalad6Make my chili oil to drizzle over top. This really gives it another depth of flavour with that slight spicy kick.

*The pottery is from a local Chinese bits and bobs store in Chinatown. Pretty sure the bowls were $3 each and the chopsticks my mom brought back from Tokyo.

Cucumber & Scallion Salad

  • 1 lb cucumber (persian or english)
  • 1 tsp kosher salt
  • 3-4 sliced scallions
  • 3 tbsp unseasoned rice vinegar
  • 1 tsp toasted sesame seeds
  • chili oil
  1. Smack the cucumber with a rolling pin or just slice up in large chunks.
  2. Put in a colander and toss with salt.
  3. Let sit for 10-15 minutes to drain excess liquid.
  4. Put cucumbers in a medium sized bowl and toss with scallions, rice vinegar and sesame seeds.
  5. Taste and add salt if needed.
  6. Drizzle with chili oil.

  1. This sounds so delicious Leslie! I make something similar and use a splash of sesame oil and some chili garlic sauce…I used to eat a side dish just like this when I lived in China…love it!! And I’m dying over those bowls!! xoxo
