Three-Ingredient Coconut Flour Cookies

coconut flour cookiesOn the weekend, I had coconut flour in the pantry that needed to be used and a hankering for something sweet. So I decided to make cookies, cookies that were also grain free and egg free (since I also had no eggs!). This recipe is pretty much only three-ingredients and a pinch of sea salt. How easy is that! I love that there are so many more options for flours and grains in stores now, it makes it less of a headache to use since I don’t have to drive around to a few stores just to make a recipe.

*Make sure that you do press these cookies down on the bake sheet, otherwise they can become dense.

Three-Ingredient Coconut Flour Cookies

  • Servings: 16 Cookies
  • Difficulty: easy

Ingredients

  • 6 tbsp coconut flour
  • 4 tbsp cold butter
  • 2 tbsp raw honey
  • Pinch of sea salt (optional)

Instructions

  1. Preheat the oven to 365 degrees and line a baking sheet with parchment paper.
  2. Pulse all ingredients together in a food processor or blend with a pastry blender.
  3. The dough will be soft and slightly sticky.
  4. Divide into 8 small balls and flatten slightly on the baking sheet.
  5. Bake until the edges are light golden, about 9 minutes. These bake really quickly, so keep an eye on them.
  6. Let the cookies cool completely before removing from the baking sheet or they will crumble.
  7. Enjoy!
