A Delicious Watermelon Radish Salad
First off, this is a recipe by Curtis, the other chef in the house. I’m lucky my husband equally loves to cook and bake as much as I do. We eat very well in the Rossi-Murray household. He whipped up this watermelon radish salad recipe using watermelon radishes we bought from the farmer’s market. It’s so easy and a perfect summer salad recipe.
If you can’t find watermelon radishes, don’t worry, regular radishes will work just as well. It doesn’t keep well, so I wouldn’t recommend making this a night before, serve it up fresh for yourself or guests.
Watermelon Radish Salad
This watermelon radish salad with Cara Cara oranges, goat cheese and toasted walnuts is as stunning as delicious!
- 1 large watermelon radish
- 2 peeled oranges
- 1 handful spring mix of lettuce
- 2 sprigs of mint
- 1 cup chopped walnuts
- 1 cube fresh goat cheese, crumbled
- 1 tbsp olive oil
- 1 tsp kosher or sea salt

Take radish and thinly slice it using a mandoline or by hand

Slice the peeled oranges into 1/4" rounds or put into pieces

Chiffonade the mint springs or tear into pieces

Arrange all ingredients on plate, crumble feta cheese, drizzle olive oil, sprinkle salt on top, enjoy!
