The Best Chocolate Chip Cookies

chocolate chip cookies

chocolate chip cookiesOne of my favourite foods ever is a good chocolate chip cookie. One that is packed with chocolate, thin, buttery and did I say packed with chocolate? I am not a cookie snob, I will about eat any cookie you offer me unless it’s pumpkin. I’m not crazy about pumpkin in anything from baked goods to savoury dishes. But let’s get back to chocolate chip cookies. I like to make a big batch, I either baked them all at once, or take half the dough and freeze it for later in this. I live with Curtis and let’s just say I have to hide sweets in our house otherwise I miss out.

I really appreciate a tasty baked good for Christmas, especially a tin full of them! And has anyone met someone who doesn’t like chocolate chip cookies? So far, I have not met this person.

Chocolate Chip Cookies

  • Servings: 4 Dozen
  • Difficulty: easy
  • Print

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 3/4 tsp baking soda
  • 1 cup butter, room temperature
  • 1 cup sugar
  • 2/3 cup brown sugar
  • 2 tsp vanilla extract
  • 2 eggs, large
  • 12 ounces bittersweet chocolate, chopped OR 2 cups chocolate chips

Instructions

  1. Preheat oven to 375ºF.
  2. Mix together the flour, salt, and baking soda. Set aside.
  3. Using an electric mixer, beat the butter until it is smooth. Add the sugars, and beat until smooth.
  4. Mix in the vanilla. Add the eggs one at a time, beating for 1 minute after each addition.
  5. In 3 additions, gradually mix in the dry ingredients.
  6. Fold in the chocolate.
  7. Scoop heaping tablespoons of dough (not any bigger than that– remember, this dough will spread) onto an ungreased cookie sheet, leaving 3 inches in between the cookies.
  8. Bake for 8-9 minutes until just the edges are golden brown (watch them, because they’ll burn quickly if you leave them in too long). Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
