Every home cook and baker needs a go-to pie filling recipe. There are few desserts that are as well-loved as blueberry pie, and for good reason! This year I wanted to make a twist on the classic pie and make a wine-infused filling with Sumac Ridge’s 2017 Cabernet Merlot which gives a nice, rich flavor. The crust is flaky, the blueberries are sweet, and the pie is perfect to share with family and friends.

Let’s just say the house smelled AMAZING! Curtis couldn’t wait to dive into the pie, but we brought it to my moms and shared with my family that evening with a side of whip cream. Consensus was 2 thumbs up! This pie will be making an appearance this Thanksgiving because:

 

Whether you are getting together with some friends or making dinner for a weeknight, this wine-infused blueberry pie is a delicious, hearty dessert classic that is surprisingly easy to make. Try this filling recipe with your favourite pie crust and you have a match made in dessert heaven.

Boozy Blueberry Pie Filling Featuring Sumac Ridge 2017 Cabernet Merlot

Ingredients:

Directions:

  1. In a large bowl combine Sumac Ridge 2017 Cabernet Merlot, blueberries, brown sugar, lemon juice, and corn starch; gently mix.
  2. Once mixed, transfer into a large pot.
  3. Heat on medium-low, until mixture thickens (about 10 min.); stir constantly.
  4. Once cooled, add blueberry mixture to cooked pie crust.
  5. If you have the tools on hand, create a lattice to top your pie or opt for a full pie top for a simpler, more traditional style.

Pie-hack: Buy a premade pie crust from Save-On-Foods or make a simple dough at home which only requires flour, butter, water and salt. Just google ‘traditional pie crust’.
