Broiled Grapefruit with Maple Cream and Ginger

I imagine that you are seeing an overload of Cinco de Mayo recipes today! I do enjoy seeing all the tacos and margaritas in my feed, but by noon I’m bored. Mother’s Day is this Sunday and for those who are planning a brunch for mom, here is an easy dish to serve up. My Broiled Grapefruit with Maple Cream and Ginger recipe is healthy and easy to make.

Serve it with mimosas, my coddled eggs, raspberry chia seed puddings or whatever else you desire. Or just serve it by itself, she can also enjoy it in bed with a cup of coffee. I enjoyed this on a Sunday, with a cup of tea and a book. No guilt was had that day on my meal choice!

Plus grapefruit has a few health benefits. Besides being tart and tangy with an underlying sweetness, grapefruit is an excellent source of Vitamin C, the antioxidant Lycopene, lowers cholesterol and the pulp contains glucarates, compounds that may help prevent breast cancer. It literally is a superfood!

Also the nice spice from the crystallized ginger really balances out the dish. It’s not overly sweet, still juicy and then you get that ginger in a bite. Just plain old deliciousness in my opinion. Is deliciousness a word? It should be.

I had some left over too, and we topped ice cream, fruit and hot chocolate with it. It was delicious and that maple flavor really stands out. If your not into maple, you can certainly just use plain cream. Or even whip up some coconut whip cream, that is equally as delicious!

I made a few that day and the ones I didn’t top with cream, I kept in the fridge overnight. They were just as good the next day, and I added the extra cream on top. So you could make these ahead easily and serve my Broiled Grapefruit with Maple Cream and Ginger for brunch on Sunday.

Broiled Grapefruit with Maple Cream & Ginger

An elegant dessert or brunch dish. Bright and not overly sweet.

Ingredients

  • 2 large ruby red grapefruit halved
  • 1/4 cup turbindo sugar or coconut sugar
  • 2 tsp finely chopped crystallized ginger
  • 3 tbsp heavy cream
  • 1/3 cup plain 2% reduced-fat Greek yogurt
  • 2 tsp maple syrup
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat broiler to high.
  2. Place grapefruit halves on a baking sheet, cut side up.
  3. Sprinkle evenly with sugar and ginger.
  4. Broil 8 minutes or until the fruit starts to char.
  5. Place the cream in a chilled medium bowl.
  6. Beat until slightly thickened.
  7. Add yogurt, syrup and vanilla to cream. Beat until fluffy.
  8. Top the grapefruit with cream.
  9. Enjoy!

Recipe Notes

Use a frozen metal bowl to get the cream into fluffy peaks. This helps the cream to develop and hold body quickly.
